Vegetarian and love grilled cheese sandwiches? What can you do if you’re craving a grilled cheese sandwich and you’re a vegetarian -even if you’re a strict vegetarian or vegan? Eat a grilled cheese sandwich. You can, you know. It’s not impossible to give into the craving and not feel guilty about it. I’m trying the flexitarian type of vegetarian eating lifestyle for a month. When I first considered blogging about a vegan diet along with a food blogger friend, I agreed to take on the challenge. But after serious thought, I changed my mind. I like to eat dairy and am not religiously opposed toRead More →

Vegetarian and Dietary Supplements Need to lose a few pounds and feel more healthy? I’m on a 30-day semi-vegetarian plan that includes eating vegetables, drinking a nutritious shake, and occasionally eating meat. One thing I did previous to trying this flexitarian challenge was to add a dietary supplement that helps with healthy digestion, supports healthy weight loss, and provides healthy energy. When I decided to go on a 30-day vegetarian plan for April, I wasn’t sure how I would do. However, I love vegetables and don’t mind skipping meat some days. In addition, I drink a great-tasting nutritious shake most days. A semi-vegetarian diet appealedRead More →

Add more vegetables to your menu. Try this yellow squash, a semi-vegetarian  recipe. Grow and Preserve Squash Grow squash in your garden, and preserve it in your freezer. Puttin’ up vegetables (the Southern way of saying preserving, canning, or freezing vegetables) will keep you from having to purchase high-priced organic food at the supermarket throughout the year. Preserve the squash by blanching it. What Does Blanching Squash Mean? The blanching process starts with washing the squash, then cutting slices about 1/8″ to 1/4″ thick, depending on how thin you like it. Boil water on the stove, enough to completely cover the squash slices you have.Read More →

Need to Eat Healthier? Try Out a Part-Time Vegetarian or Flexitarian Diet for 30 Days I love to eat eggs, cheese, and meat. That certainly limits my choice of becoming vegan. Patty Cakes Pantry and Kitchen Southern Hospitality food bloggers agreed to a 30-day vegan blogging and eating plan. At first, I said yes. I reconsidered. How could I be vegan for an entire month? No way. But vegetarian? Maybe. When I looked closer at vegetarian options, I saw the flexibility of food choices. Then I discovered a term, flexitarian. It’s the same as a part-time vegetarian or semi-vegetarian. That could work for me. CanRead More →

My vegetarian breakfast menu for today was oatmeal (the minute-cooking kind), toast, and apple slices. Easy breakfast for kiddos. It’s filling, nutritious, and it’s quick to prepare. Good thing because when my three little grandchildren are hungry, having to wait is not a priority. My granddaughters are used to having honey in their oats. I make it for them like their mom makes it for them – oats and honey cooled with an ice cube. I like butter and milk in my oatmeal. This is acceptable by lacto-vegetarians because they use dairy products. However, if you are an ovo-vegetarian and you prefer not to use dairy, you could leave theRead More →

Vegetarian Burrito Day Today begins my thirty days of vegetarian recipes. This month will be challenging for me because I like to eat meat. But like my dad told me once, “A person doesn’t need to eat meat every day.” So in April, I’ve decided I will skip meat a few days each week and see how I feel at the end of the month.Read More →

International Women's Day

Celebrating with Purple and Easy Recipes International Women’s Day, founded by Clara Zetkin in 1910, has evolved from “bread and peace” in 1917 to the “Press for Progress” theme in 2018. The idea is to celebrate with purple and carry out the #PressforProgress theme worldwide all year. I started the day with bagels topped with Raspberry Chipotle Fruit Spread and cream cheese and coffee. Pressure cooker chicken and rice, baked eggplant, and cherry juice was celebrated in purple style.Read More →

Goulash

What do you eat as a comfort food? Macaroni turned out to be my comfort food on Monday, March 5th. I ate a small portion, about 1/4 cup, of leftover macaroni and cheese I made for my little grandchildren this past weekend. It’s the go-to food in every household with children, right? It’s fast and easy to make. Tastes good. Everybody’s happy with dinner, parents and kids alike. We’re talking comfort food. Not necessarily the healthiest. Just what tastes good and makes you feel good.Read More →
