This dish is an easy soup recipe for kids but also a great recipe for the whole family. My grandkids love the chicken soup topped with the corn tortilla homemade strips my daughter makes. They taste so crispy and delicious and definitely have made this chicken tortilla soup meal a family favorite.

Homemade tortilla strips are the best kind of thin strips to eat with this delicious soup in my opinion. But if you’re short on time, you’ll still have a tasty soup when you serve it with store-bought chips.

Easy Chicken Tortilla Soup

Ingredients

  • 1/2 Sweet onion diced
  • package Rotisserie chicken, shredded
  • 1 package Chicken stock
  • 1 can Southwestern corn drained
  • 1 can Black beans drained

Instructions

  1. Saute onion in olive oil in a large soup pot on the stove top.

  2. Add chicken stock, corn, and beans and stir.

  3. Mix in the rotisserie shredded chicken.

  4. Cook on low until boiling, then simmer until ready to serve.

  5. Top the servings with crispy tortilla strips, grated cheese, and sour cream.
