Tips on How to Make the Mediterranean Garlic Chicken Flatbread Pizza
Prep time for the garlic chicken flatbread pizza is simple when you use leftover chicken or other meat.
Shred the meat, and slice the fresh garlic on your cutting board. Take out the cheese from the fridge, and cut a few basil leaves for the toppings. In about five minutes, all meal prep can be done.
I made this Mediterranean chicken flatbread pizza and used my pizza stone to bake it in. If you don’t own a pizza stone, a baking sheet should work fine. Or you could use a cast iron pan to cook the pizza.

What kind of chicken to use in the recipe:
Although I made mine with a leftover piece of baked chicken breast, you can use rotisserie chicken as well. Or, cook chicken thighs ahead and save the leftovers for the flatbread pizza.
There are a variety of flatbreads to choose from. I am loving the Joseph’s brand (a square flatbread) and Flatout flatbread. You can even order these on Amazon:

Mediterranean Garlic Chicken Flatbread Pizza

- 1 Flatbread (Flatout brand)
Ragu Simply Chunky Garden Vegetable Sauce
- 1 Precooked chicken breast
- 2 Cloves Fresh garlic
- 4 Leaf Fresh Basil
- 4 Slice Borden Swiss Sliced Cheese
Heat the oven to 375°.
Put the flatbread onto the pizza stone.
Add the pizza sauce on the flatbread with a pastry brush.
Cover the flatbread evenly with the shredded chicken and chopped garlic.
Top with artichokes and cheese (and more sauce on top if you like).
Place basil leaves in the middle on top.
Bake the pizza for 20 minutes.
The calories are estimated for one-half of the pizza (one serving).
Seasonings for Flatbread Pizza
The type of seasonings you use for your flatbread pizza, of course, depends on your main ingredients. However, any mediterranean flavors should do perfectly with the flatbread. I’ve listed a few of my favorite seasonings here:
- red onion
- red peppers (especially McCormick’s Red Pepper Flakes) or cayenne pepper
- black pepper
- McCormick Garlic Herb and Black Pepper and Sea Salt
- McCormick Salt-Free Garlic Herb

Cheese Options for the Flatbread Pizza
You may want to experiment with the type of cheese to put on your pizza. Although I chose Swiss cheese for this recipe, you might want to try one or more of these options:
- Mozzarella cheese
- Parmesan cheese
- Feta cheese
- Swiss cheese
- Goat cheese
- Lactose-free almond mozzarella-like cheese
Serve the flatbread pizza with a salad of fresh veggies including grape tomatoes or cherry tomatoes. Add a few Kalamata olives and fresh parsley. Top with salad dressing that has Greek flavors, Italian dressing, or oil and vinegar.
