Make this Broccoli Apple Salad
Why broccoli? It’s nutritious. Why apples? You need a daily portion of fruit. Mix these two together, and add more delicious ingredients. What do you have? Incredibly happy taste buds and a recipe that’s perfect to include in a 21-Day Fix weekly meal plan.
Measuring Food to Lose Weight
When I discovered what the 21-Day Fix eating plan is all about, I had been drinking Shakeology every day for approximately two months. Previous to Shakeology, a powder that is mixed with water or beverage, I was addicted to sweets. Every day I wanted something sweet to eat (especially ice cream) after dinner. Just a cup satisfied my cravings. But then…things changed.
Ice cream cravings began to disappear. The only thing I had done differently was to drink Shakeology. A few pounds had come off as well. But I wanted to lose more than a few.
A thought came to me. If snack cravings were diminishing, maybe I should check out the other things that had come with my Shakeology package – like the 21-Day Fix items. DVDs. Pretty color-coded containers to measure food. I pulled out the DVDs and started working out and began to measure my food – and started to lose weight (20 pounds in about 3 months).

The eating plan booklet that comes with the 21-Day Fix program is so easy to use. No counting calories! All you do is measure your food in the colorful containers that come with the plan. The book has great recipes that I’ve tried. As a food blogger, however, I’m always creating recipes and sharing them.
The Broccoli Apple Salad recipe serves two people, approximately a serving of fruit, and a serving of vegetables – with a couple extra ingredients. I had two small apples on hand when I made it this time and cut a little more of the veggies than before. Therefore, the recipe below provides a little over one serving each of vegetables and fruit.
Recipe
Broccoli & Apple Salad
Add this nutritious and delicious vegetable and apple salad to your 21-Day Fix weekly meal plan.
Ingredients
- 1/2 each Red Bell Pepper sliced in small pieces
- 2 servings Kerrygold Kellig Sweet Cheddar Natural Cheese cut in small cubes
- 2 cups Fresh Broccoli Flowerets cut in very small flowerets
- 2 small Apples cut in small pieces
- 1 each Roma tomato cut in small chunks
- 4 tablespoons Ken's Steak House Lite Sweet Vidalia Onion Dressing
Instructions

Cut and chop vegetables, cheese, and apples.

Stir all ingredients together.

Mix in dressing well.
Prepare this salad, put it into a medium size storage container, and place it in the fridge. Or you can go ahead and spoon the correct measured amount in small serving-size containers, ready to eat and no measuring needed later. This makes it easy for work and school lunches as well as snacks throughout the day.
