This morning I had eggs, bacon, and grits. It’s a Susannah Mushatt Jones type of breakfast. And since she lived to 116, it must be a good way to start out every day. Do you like grits with butter, salt, and pepper or with sugar? If I’m going to eat a hot cereal, Cream of Wheat and sugar sounds better to me. However, I remember eating rice as cereal (with sugar and milk) when I was little. Then my family moved to the Gulf Coast where people eat rice for just about every meal except breakfast. They serve the rice with gravy. I got usedRead More →

Chili Vegetable Omelet Breakfast began today with protein plus. A day that begins with protein makes me feel less hungry. Do you eat eggs and vegetables for breakfast, or do you opt for oatmeal and fruit? Which is best? Opinions vary about whether or not carbohydrates should be included in breakfast. Friends joke about the eggs that I eat. You can browse this blog and see that I love to eat eggs. But they’re nutritious. It seems that I’m not the only one with this opinion. Ines Subashka, a certified personal trainer at inspiredfitstrong.com favors eating eggs early in the day – seven to eight eggs.Read More →

February is filled with dip, snack, and dessert recipes galore for Super Bowl get-togethers and Valentine’s Day. But what about after those two most popular occasions? After all those snacks and sweets, veggies sound very appetizing. Too many snacks and desserts can pack on the pounds quickly. I’ve been choosing more protein meals, cutting back on meat (although I love it), and increasing vegetable and fruit intake. Veggies for Breakfast This morning I started off with a veggie-packed three-egg omelet. Too many eggs? Perhaps not. My husband met a professional truck driver who feeds his pet macaw a four-egg omelet for breakfast. I had theRead More →

This week I’ve challenged myself to prepare meals by using four different kitchen appliances. Crockpot, microwave, and griddle meals are doable. Pop-up toaster meals require a bit more creativity. I shared my griddle and pop-up toaster French Vanilla French Toast meal previously. It turned out successful, so much that I’ve made it twice already. The crockpot meal, Crockpot Pork Chops, turned out great. I’ll make that one again for sure. The recipe is for four pork chops, servings for up to four people. I also made a crockpot chocolate pudding brownie dessert. While that was cooking (1-1/2 hours), I cooked the chocolate frosting in the microwave.Read More →

This week I’ve taken on the challenge of cooking a daily meal by using either my crockpot, griddle, microwave, or pop-up toaster – absolutely no stove or oven cooking. The first three seem easy to do, but that last one requires diligent creativity. The fourth kitchen appliance of my meal quest resulted in the perfect answer – French Toast Sticks. Great idea! It’s a prepare-ahead recipe, and you freeze them and pop them into the toaster whenever you want a quick breakfast. I found the idea at happyhealthymama.com, a blog with wholesome recipes and healthy living. Next on my toaster breakfast plan was to tryRead More →

Toddlers get bored easily with the same food all the time. So do adults. Imagine if you had to eat chicken nuggets and fries for dinner every day. You’d get tired of it pretty fast, too. Weekends are kind of like mini-holidays for people who work Monday through Friday. Mornings are typically rushed during the week with little time to spend extra time in the kitchen. One of the fanciest breakfasts I remember my mother making was French toast. I only got to have that when on vacation. The occasion was when my two young stepdaughters were on a summer visit. The eldest, Ivy, who stayed right by Mother’s side to watch, said, “I know how to make French toast.” A bond between those two began that day. They were so much alike in some ways. Possible perfectionists, they had aRead More →
