Egg and sausage muffin with habanero peach jelly is a good meal to begin the day. And it’s an easy breakfast for truckers. Buy an egg and sausage muffin at McDonald’s, at a truckstop deli, or cook it in the big rig. Early one morning on the OTR trip with my husband in his big rig I had a “That’s it!” moment. I found out who sells the habanero jelly I like. Have you ever had an egg and sausage muffin breakfast with hot jelly? You’ve gotta try it. Read More →

This morning I had eggs, bacon, and grits. It’s a Susannah Mushatt Jones type of breakfast. And since she lived to 116, it must be a good way to start out every day. Do you like grits with butter, salt, and pepper or with sugar? If I’m going to eat a hot cereal, Cream of Wheat and sugar sounds better to me. However, I remember eating rice as cereal (with sugar and milk) when I was little. Then my family moved to the Gulf Coast where people eat rice for just about every meal except breakfast. They serve the rice with gravy. I got usedRead More →

I still am amazed at how eggsRead More →

Do you eat eggs and vegetables for breakfast, or do you opt for oatmeal and fruit? Which is best? Opinions vary about whether or not carbohydrates should be included in breakfast. Friends joke about the eggs that I eat. You can browse this blog and see that I love to eat eggs. But they’re nutritious. It seems that I’m not the only one with this opinion. Ines Subashka, a certified personal trainer at inspiredfitstrong.com favors eating eggs early in the day – seven to eight eggs.Read More →

Follow my blog with Bloglovin  Eat a two-egg omelet for breakfast, and you have about 12 grams of protein. Add pork sausage, onion, and herbs to that, and your protein increases to about 18-20 grams. Organic herbs add so much flavor to dishes. Dill, oregano, and cilantro from my kitchen herb garden were included in this omelet recipe. First, I chopped up the already-cooked pork sausage and part of an onion. SinceRead More →

This week I’ve challenged myself to prepare meals by using four different kitchen appliances. Crockpot, microwave, and griddle meals are doable. Pop-up toaster meals require a bit more creativity. I shared my griddle and pop-up toaster French Vanilla French Toast meal previously. It turned out successful, so much that I’ve made it twice already. The crockpot meal, Crockpot Pork Chops, turned out great. I’ll make that one again for sure. The recipe is for four pork chops, servings for up to four people. I also made a crockpot chocolate pudding brownie dessert. While that was cooking (1-1/2 hours), I cooked the chocolate frosting in the microwave.Read More →
