You only need two ingredients to prepare this quick candy. It’s a sweet and salty blend but more on the sweet than the salty.
Butterscotchies for Christmas and New Year’s
Years ago, I made these for the Christmas holidays. I had intended to make them for Christmas 2021 and even bought the ingredients. But I totally forgot about them.
On New Year’s Eve, however, I went to the store and purchased more ingredients to make butterscotchies and another snack.
I had brought the grandlittles home and stayed for New Year’s weekend. Since my daughter’s in-laws were coming over to celebrate New Year’s with us, I wanted to make special treats. Quick, easy, and tasty ones.
The menu planned was sandwiches, salad, and chips. Butterscotchies and a low-carb, low-sugar medley of nuts were the treats I decided on.
How to Make the Butterscotchies
First, you need two pots or a double broiler. One pot needs to be larger than the other. Add about three inches of water in the larger pot.
Place the smaller pot into the larger pot and turn the burner on medium or medium low. Then add butterscotch morsels into the smaller pot and stir them until they are melted. Once melted, pour a can of chrunchy chow mein noodles into the smaller pot of melted butterscotch morsels.
Stir the crunchy noodles into the butterscotch morsels quickly. Then drop by spoonfuls onto wax paper. Cool until they are crunchy and the butterscotch is no longer soft.
I placed my butterscotchies into the fridge for a few minutes before serving.
It’s a little bit of a process to make the candy. Yet it’s really easy to do. And you don’t have to bake anything.
Plan a Second Snack
Plan a second snack like a mixed nut and dried fruit medley in case not everyone likes the butterscotch treat.

Some folks don’t like sweets too much (I’m not one of them 😁). Of course, I expected that not everyone would want a sweet treat.
These butterscotch candies are incredibly oh-so-good.

Ingredients
- 2 Bag 11 Oz Nestle Butterscotch Morsels
- 1 Can 24-Oz La Choy Chow Mein Noodles
Instructions

Fill a large pot (approx. 3 qt.) with water and heat to boiling.

Cover two cookie sheets with wax paper.

Place an empty smaller pot inside the pot with the boiling water.

Pour the two bags of butterscotch morsels into the empty pot and stir them until they melt.

Pour the crunchy chow mein noodles into the smaller pot with the butterscotch morsels and mix well.

Drop spoonfuls (tablespoon) of the butterscotch candy onto the wax paper.

Allow the candy to cool until crunchy.
There was one little guy that did like the butterscotchies. My little five-year-old grandson. And he wasn’t the only one so I was happy the treat was a success.

- pretzels – Makes a good sweet and salty combination when mixed with the butterscotch chips
- cashews – Use salted cashew pieces.
- pecans – I made some with pecans for New Year’s Day.
- shoestring potatoes (the crunchy kind from a can)
The other treat I made was the medley of nuts with two additional ingredients.

This is a nice crunchy snack to serve for those who can’t have sugary treats (or choose not to).
