You know the holiday season is around the corner when you start thinking of a green bean casserole topped with French’s Crispy Fried Onions. But those crispy onions make good toppings on breakfasts, too. Celebrate Labor Day weekend with French Fried Onion Spinach and Eggs. Great recipe. Easy.

I do love French’s Crispy Fried Onions and often keep a can of them on hand. Since eggs are top priorities on my weekly menu list, I tried a new recipe, and – Voilà! – French Fried Onion Spinach and Eggs! Now I’ve added it to my favorite egg dishes.

Simple to Make

Simple to make for breakfast (or any other time), I prefer cooking this spinach and egg dish on my electric griddle. Incredibly delicious! Although the recipe is for one serving, you can increase the ingredients to serve a crowd as well. Just add more of all the ingredients. Double the size for two, quadruple for four, etc.

Best Cooking Appliance for Scrambled Eggs

Honestly, in my opinion, my scrambled egg and omelet dishes turn out the best when I cook them on the electric griddle. Don’t have a griddle? You can just as easily cook this recipe in a cast iron skillet, however, or whatever pan you normally use to scramble eggs in.

I’ve come to the conclusion that my pans and cooking appliances take on their own personalities. Food, no matter what, seems to always stick in a certain small skillet I have. I can turn the burner on low, pour plenty of oil or cover the bottom of with butter, add water – it’s going to stick! But not so on my precious griddle. I baby that appliance. Let me tell you why.

My mom died in 2008, and I think my dad grieved for the rest of his life for her. He lived seven more years after she passed and missed her terribly. One night before a Christmas holiday, he and my daughter and I went shopping at Walmart. He purchased an electric griddle for a gift and bought me one, too. I took it home and began using it often and love it. So, yes, you could call it part of my comfort food items. I think of him and that fun Christmas shopping night many times when I’m cooking on the griddle.

Don’t panic. It’s not Christmas yet. You still have time to do your shopping. But it is Labor Day weekend. Hopefully, you will be able to rest from all your labor on Monday – and enjoy this very yummy breakfast.

Here’s the recipe:

French Fried Onion Spinach & Eggs

Spinach and eggs with a yummy crunchy toppings

  • 1 tbsp Coconut Oil
  • 2 cups Fresh Organic Spinach
  • 2 Eggs
  • 1/2 cup Grated Cheddar Cheese
  • 1 can French Fried Onions


  1. Saute spinach in the coconut oil on a griddle.  

  2. Add the eggs and scramble.

  3. Add the cheese.

  4. Top with French Fried Onions.

One more note about that electric griddle – it’s really good for making great pancakes. So why not make some pancakes to go along with the holiday egg breakfast? Sounds great to me.
