A Spicy Enchilada Quinoa Soup
I’ve noticed some great slow cooker enchilada recipes lately and have really been wanting to try them out. In fact, today I had the leftovers for lunch. I cut a small piece of the rib-eye into strips and stir-fried veggies to go with it.
