Apple Cinnamon Bread with Low Sugar

Ingredients

  • 1-1/2 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1-1/2 Cup White Whole Wheat Flour Or use whole wheat flour
  • 1/4 Cup Coconut Flour
  • 3 Tablespoon Zero Calorie Brown Sugar
  • 2 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Ground Nutmeg (optional)
  • 2 Eggs
  • 1/2 Cup Unsweetened Applesauce
  • 2 Teaspoon Vanilla Extract
  • 2 Cup Pink Lady Apples, chopped Can use Gala, Granny Smith, or any apples that you have on hand
  • 1 Teaspoon Zero Calorie Brown Sugar (Optional)
  • 1/4 Cup Chopped raw pecans (Optional)

Instructions

  1. Heat the oven to 400°.

  2. Mix all the dry ingredients in a large bowl.

  3. ​Bring the eggs to room temperature prior to mixing.

  4. Then beat the eggs in another large mixing bowl.

  5. Mix in the unsweetened applesauce and vanilla.

  6. Combine the dry and wet ingredients, and mix well.

  7. Add the chopped apples into the mixture, and pour the batter into the parchment paper that has been fitted into the loaf pan.

  8. Mix a teaspoon of the Zero Calorie Brown Sugar with the chopped pecans and sprinkle on top. (Optional)

  9. Bake at 400° for 60-70 minutes.

  10. Test for doneness by inserting a wooden toothpick into the middle of the bread.

  11. If the toothpick is clean, not wet, it's done.
