Lentil, vegetable, and chicken apple sausage soup

Ingredients

  • 1/2 cup Lentils
  • 4 Potatoes
  • 4 Carrots
  • 3 Bunch Green Onions
  • 3 Garlic cloves
  • 1-1/2 cup Kale or approximately 3 handfuls
  • 1 32-Oz box Organic light sodium chicken broth
  • 4 Cup Water
  • 1 package Gluten-free chicken apple sausage

Instructions

  1. Rinse the lentils, checking for and discarding any debris such as tiny pebbles.

  2. Set aside the lentils.

  3. Peel, slice, and dice the vegetables, and put into a large pot with the lentils.

  4. Add the broth and water to the pot.

  5. Turn the burner on high, and cook until boiling then turn on low and cook for approximately 20 minutes.

  6. While the vegetables and lentils are boiling, slice the sausage links into thin (or thick if you prefer) slices.

  7. When the veggies and lentils have cooked for 20 minutes, add the sliced sausage to the pot, and cook for approximately 20 more minutes.

  8. Ready to eat.

This recipe will serve four people or two people with seconds or leftovers. Double the amount of ingredients to make for your family and guests.
