Pressure cooker squash

Simplify dinner by cooking squash and sweet potatoes together in an electric pressure cooker. You can cook multiple vegetables at the same time in an InstaPot (or electric pressure cooker). Like yellow squash, for example.

Don’t like squash? Skip it and cook several sweet potatoes instead. But check out the list below on this page of optional veggies you could try cooking together.

How to cook sweet potatoes and yellow squash together in an electric pressure cooker

First, slice the squash according to the recipe shown below on this page. Add chopped onion to the squash.

Next, wash the sweet potatoes. Season the squash and onion and put them into the pressure cooker pot.

Place the pressure cooker’s rack on top of the squash. Set the sweet potatoes on top of the rack. Lock the lid, and set the timer mode on vegetables/steam.

How to cook multiple sweet potatoes in an electric pressure cooker

Add water into the pot (about 1/2 cup), and place approximately six medium sized sweet potatoes on the bottom of the pot. Place the steamer rack on top of the bottom layer of potatoes. Then add four to six more medium sweet potatoes on top of the rack.

Close and lock the lid, and set the cooking mode on vegetable/steam. The time it takes to cook the sweet potatoes varies. Depending on your pressure cooker and amount of sweet potatoes, it may take eight to fifteen minutes to cook.

Manually release the steam, and check the potatoes for doneness. If they aren’t ready, close and lock the lid to cook the sweet potatoes about ten more minutes. Check again for doneness.

Another option is to  put sweet potatoes not yet done into the microwave for five to ten minutes.

List of other vegetables to cook together in an electric pressure cooker

  • Brussels sprouts

Cabbage is also easy to cook in a slow cooker. If you like cream cheese, you e got to try the cream cheese cabbage recipe. Mmmm so good.

Tips on cooking squash and sweet potatoes together in an electric pressure cooker

This recipe combines squash and three sweet potatoes. Of course, you can cook one or two of the potatoes if preferred.

The amount of sweet potatoes you can cook on top of the rack depends on the size of the potatoes and your pressure cooker. I can cook approximately six small to medium sweet potatoes in mine.

Easy way to cook summer squash in a pressure cooker

Instructions

  1. Cut squash into slices, then cut the larger ones into fourths.

  2. Cut the onion in half them into small chunks.

  3. Put 1/2 tablespoon extra virgin oil into the pressure cooker.

  4. Add the squash and onion with the oil.

  5. Add the seasoning and stir.

  6. Add the butter on top.

  7. If adding another vegetable, place the rack on top of the squash and onion.

  8. For this recipe, I included three sweet potatoes and placed them on the rack.

Recipe Notes

Optional: You can add 1/4 water. I added 1/2 cup water, and it was too much.
