Cream cheese not a part of your vegetarian diet? Not a problem. You can adapt it to fit your taste.
This morning I decided to have a few celery sticks with peanut butter. But then I really wanted a half of a toasted bagel. So I chose both – and that’s not all.
Add Raspberry Topping
My daughter got me hooked on a tasty raspberry chipotle sauce we buy from H.E.B. stores. She served bagels at an event with this sauce mixed with cream cheese. Oh, my goodness! So good.
Whether you’re a strict vegetarian or not,, you could enjoy this as a bagel topping. I have substituted a chipotle raspberry jelly from Wal-Mart, and it is good as well.
If you don’t eat cream cheese, smooth peanut butter on the bagel. You could also eat the bagel with only the raspberry topping.
My semi-vegetarian breakfast today consisted of a half toasted bagel topped with cream cheese and raspberry chipotle sauce, and celery sticks with peanut butter.
Breakfasts don’t always include vegetables. Celery sticks dipped in peanut butter make a simple side dish, though. And they provide at least one daily vegetable. On that note, try dipping carrot sticks in peanut butter. Oh, yum! Not sure if I’d like them for breakfast (except in an egg omelet), but they’re great for snacking.
Other Breakfast Veggie Ideas
I love bagels with cream cheese and the raspberry sauce, but one of the best bagel breakfasts I’ve had is with eggs. However, my favorite breakfast-go-to is a fried egg or two with toast. Or omelet with stir-fry vegetables. Like celery and carrots. Delicious. Filling. Go half a day on an egg meal without being hungry. Works for me.
Opting out of breakfast? Take peanut butter and celery sticks to snack on throughout your day.
