Cook This Quick & Easy Cheeseburger Soup

Looking for a quick way to make cheeseburger soup? Make this recipe using leftover mesquite and hickory smoked grilled hamburgers with a microwave and slow cooker. It’s easy to do and doesn’t take much time.

Grilled hamburgers do really taste good. Especially hamburgers cooked over charcoal and mesquite and hickory wood chips that were soaked overnight.

The use of the microwave speeds up the time it takes to make this recipe. Cook the microwaveable ingredients first. Then everything goes into the slow cooker.

Set the table, and make a salad to serve with the soup if you’d like. Crackers or chips and salsa also go great with this soup.

The night I created this recipe, temperatures were dropping to 34 degrees. My husband asked if I could make cheeseburger soup. I looked up recipes online.

On-Hand Kitchen Ingredients Creativity

Several recipes from the Internet looked good. They gave me ideas. However, I couldn’t help myself. My look-and-see-what-ingredients-I’ve-got-on-hand-in-the-kitchen creativity kicked in. And this new recipe is what we had for dinner:

Grilled Cheeseburger Soup for Two

Make this quick and easy cheeseburger Soup.

Ingredients

  • 1-1/2 Cup Water
  • 3/4 Cup 2% Organic Milk
  • 4 Red Potatoes
  • 1 Tablespoon Butter
  • 1/2 Cup Half and Half
  • 1 Each Instant microwaveable macaroni and cheese
  • 1/2 Cup Shredded Mozzarella cheese.
  • 1" x 2" Slice Dubliner Kerrygold aged cheese Cut into small pieces
  • 2 Grilled hamburger patties

Instructions

  1. Peel potatoes, slice them and cut them into small pieces so that they look like hashbrowns.

  2. Cook the potatoes with one cup of water in a microwave for 8.5 minutes, stir and cook another 5 minutes (it should resemble mashed potatoes) and put into the slow cooker.

  3. Cook one instant microwaveable macaroni and cheese cup by filling the cup with water to the indicated line then by stirring in the packet of cheese after cooking the macaroni first according to directions. 

  4. Put macaroni and cheese into the slow cooker.

  5. Slice 2 grilled hamburger patties very thin and cut into smaller pieces, then add to the other ingredients in the slow cooker.

  6. Add 1 tablespoon butter cut into pieces and add to crockpot. 

  7. Add 1" x 2" long cheese use Dubliner 100% natural cheese by Kerrygold. 

  8. Add milk, water, and 1/2 cup Half and Half into the slow cooker. 

  9. Turn slow cooker on high, and cook for 1-1/2 hours. 

Would I do anything differently if I made it again? Maybe. Maybe not. It depends on:

  • if I need to make a quick meal
  • if I have all the ingredients for the recipe
  • if I’m in a creative mood and feel like coming up with a new version of the recipe
  • if my husband says, “Make that cheeseburger soup again exactly like you did the first time

One thing I know is this cheeseburger soup recipe was a great success in our kitchen. There were no leftovers. Whatever extra there was got devoured in one setting by the two of us.
