Quick way to cook sweet potatoes
Wash the sweet potatoes.
Poke holes in the sweet potatoes with a fork.
Place the sweet potatoes on a microwaveable plate.
Cook in the microwave for 3-4 minutes, and check after 3 minutes for doneness - they are ready to fry when you can poke them easily (and don't fall apart) with a fork.
Slice the potatoes into approximately 1/4" patties (or slices), , leaving the skin on.
Heat an cast iron skillet on medium high, and add the coconut oil in the pan.
Fry the sweet potato patties, turning them over after a couple of minutes.
Cook the sweet potato patties for another minute or two.
Serve with your choice of meat and green vegetable.
