Hot Link & Cheese Omelet

An omelet with Earl Campbell's Hot Links and cheese


  • 1 Hot Link (Earl Campbell's Hot Links brand)
  • 1 tbsp butter
  • 4 Large Eggs
  • 1/2 cup Organic Colby-Jack Shredded Cheese (H.E.B. brand)


  1. Cut one hot link into thin slices and halved or quartered (I halved some and quartered some).

  2. Add the butter to a cast iron skillet (or your choice of a pan) and heat on medium.

  3. Stir the link pieces until done (about two minutes).

  4. Whisk the eggs and mix in with the butter and hot link pieces, and turn the burner down to low.
  5. Stir the eggs and link pieces lightly, being careful not to scramble the eggs, then let set.

  6. Add the cheese on top, and turn the burner off.

  7. Serve.

Recipe Notes

This recipe takes approximately 5-7 minutes to cook on my propane gas stove. The cooking time varies according to the stove.
