Egg-less Vegetable Omelet is for the person who loves omelets but doesn't want to eat eggs.
Slice a tomato to serve on the side on a bed of lettuce.
Dice half of the onion.
Divide the broccoli into small pieces.
Mix a cup of Pico de Gallo with the onion and broccoli.
Open a can of corn, drain, and add 1/2 cup of it to the Pico de Gallo veggie mix.
Add a sliced avocado on top, and add your favorite salsa.
