Egg-less Vegetable Omelet

Egg-less Vegetable Omelet is for the person who loves omelets but doesn't want to eat eggs.

  • 2 Lettuce Leaves
  • 1 Tomato sliced
  • 1/2 Sweet Onion diced
  • 1 cup Broccoli divided into small pieces
  • 1 cup Pico de Gallo Purchased at the supermarket, or make your own version.
  • 1/2 cup Corn
  • 1 Avocado


  1. Slice a tomato to serve on the side on a bed of lettuce.

  2. Dice half of the onion.

  3. Divide the broccoli into small pieces.

  4. Mix a cup of Pico de Gallo with the onion and broccoli.

  5. Open a can of corn, drain, and add 1/2 cup of it to the Pico de Gallo veggie mix.

  6. Add a sliced avocado on top, and add your favorite salsa.
