Chicken Avocado Cheese Sandwich

Make this easy slow cooker baked chicken sandwich with avocado and cheese.

Ingredients

  • 2 slices bread
  • 1 each chicken leg and thigh
  • 1/4 each avocado
  • 1 package chicken leg quarters
  • 3 slices cheese
  • 1 teaspoon fine Pink Himalayan salt
  • a dash of Peppercorn medley

Instructions

  1. Cook the chicken on high in the slow cooker with no water.

  2. After you put the chicken in the slow cooker, lightly season it with the Peppercorn medley (not even half of a teaspoon).

  3. Cover and cook on high for 5-1/2 to 6 hours.


  4. Stick a fork or knife in each piece of chicken to be sure there are no pockets that don't get cooked.

  5. When the chicken is done, take out one leg quarter and debone it.

  6. Use the deboned chicken pieces to make a sandwich.

  7. Peel an avocado, and slice a few pieces off of one end or side of it.

  8. Toast the bread.

  9. Put mayonnaise on one side of the bread, and mash the avocado you've sliced onto the other half of the bread.

  10. Add three or four cheese slices on the side of the bread with mayonnaise.

  11. Put the sandwich halves together, and cut in half.

  12. Serve a half sandwich with half of an apple.
