Eggrits Delight

Fried eggs over grits sprinkled with cheese

Ingredients

  • 1/4 cup water
  • dash sea salt
  • 1/4 cup grits
  • 2 large eggs
  • 1 tbsp coconut oil Use Earth Balance Organic Whipped Buttery Spread, and cut 40 calories.
  • 1/4 cup mozzarella cheese (part skim)

Instructions

  1. Boil water until boiling briskly.

  2. Slowly stir in grits and salt, and cover.

  3. Turn burner from high to medium/low or low (I turn my gas burner to low.)

  4. Cook for five minutes, or until grits thicken, stirring occasionally, then remove from heat.

  5. Mix in half the cheese.

  6. Add one tablespoon coconut oil or Earth Balance whipped butter to an iron skillet or pan that you fry eggs in.

  7. Fry the eggs like you prefer them.

  8. Serve the eggs on top of the grits, and top with the rest of the grated cheese.
