Similar to Goulash Without the Macaroni

This soup is similar to goulash without the macaroni, and it’s low carb.

My husband asked me one day if I could make a vegetable soup. “Or is there any way,” he said, “that you could make goulash without the macaroni?”

So I made this soup recipe, and he and I liked it very much. In fact, this recipe is definitely a keeper for us.

What You’ll Need to Make this Soup:

  1. 1 medium sweet onion
  2. 2 small or 1 large yellow summer squash
  3. 1 lb ground chuck or lean hamburger
  4. 1 tomato
  5. 1 can black beans (I used Trappey’s Seasoned Black Beans)
  6. 1 can Cut Italian Green Beans
  7. Crackers to serve with the soup

Seasonings:

  1. Fennel Seed      This is an Italian seasoning that gives the Easy Italian Vegetable & Hamburger Soup an exceptional flavor.
  2. Basil – I used dried basil in this soup recipe, but fresh basil can work just as well if not better.
  3. Parsley – Dried parsley was used in this recipe.
  4. McCormick Salt Free Garlic & Herb – I love this seasoning because it has no salt, yet the garlic and herb combination has a good flavor.
  5. Chile Seasoning (I used Santa Fe Seasons Chile Blend) – Usually,though, I don’t include chile seasoning in my soups. However, it blended well with the other seasonings in this soup recipe. Santa Fe Seasonings are some of the best ever seasonings in my opinion.

Pasta is Optional for Easy Italian Vegetable & Hamburger Soup

My husband and I hardly ever eat pasta. But he loves goulash, the kind with large elbow macaroni. However, we seldom eat macaroni anymore because it has high carbs.

You could make the Easy Italian Vegetable & Hamburger Soup with pasta if you’re not worried about eating high carbs. Lean ground beef or ground turkey both work for Easy Italian Vegetable & Hamburger Soup as well as the goulash.

The Goulash Similar to Vegetable & Hamburger Soup But With Macaroni

But if you need to cut carbs out, make it differently like the soup recipe below. Incidentally, the yellow squash can make a good alternative for the pasta.

Easy Italian Vegetable & Hamburger Soup

Ingredients

  • 1 Medium sweet onion
  • 1 Tablespoon Olive Oil
  • 1/2 Large Yellow Summer Squash
  • 1 Lb Ground Chuck Hamburger
  • 1 Can Trappey’s Seasoned Black Beans
  • 1 Can Cut Italian Green Beans
  • 1 Tomato
  • 1/2 Teaspoon Fennel Seed
  • 1/2 Teaspoon Basil
  • 1/2 Teaspoon Parsley
  • 2 Teaspoons McCormick Salt Free Garluc & Herb
  • 2 Teaspoons Santa Fe Seasons Chile Blend

Instructions

  1. Slice the onion into small pieces and sauté in the oil in a skillet.

  2. Cut 1/2 of a large yellow summer squash or 2 small ones into slices, cut the slices into fourths, then add to the onions.

  3. Stir the squash in with the onions and stirfry a minute or two.

  4. Mix in 1/4 of the fennel seed, basil, and parsley with the onion and squash.

  5. Put the onions and squash into a large pot when the onions look translucent and before they turn dark and burn.

  6. Add the hamburger in the same skillet you cooked the onion and squash in.

  7. Season the hamburger with 1/4 teaspoon each of the fennel seed, basil, and parsley.

  8. Mix in 1 teaspoon salt, 1 teaspoon salt-free garlic seasoning, and 1 teaspoon chile seasoning with the hamburger.

  9. Cook the hamburger until brown.

  10. While hamburger is cooking. slice the tomato into small chunks.

  11. Drain any grease, then add the meat to the pot with the onions and squash.

  12. Add the Italian green beans, the tomato chunks, and black beans to the pot (I partially drained the can of black beans.).

  13. Sprinkle 1 teaspoon of the salt-free garlic seasoning and chile seasoning on the vegetables and meat then stir.

  14. Add 2 cups water to the pot, and stir with the vegetables and meat.

  15. Cook on high until boiling, then turn burner to medium low for 5 or 10 minutes.

  16. Ready to serve.

Recipe Notes

This soup was about 4 servings but could be adapted to more if you add additional water and/or vegetables and hamburger.

Cornbread

There’s a trick to cooking a pan of Southern cornbread. You need a cast iron skillet and cooking oil. Check out my goulash recipe for more details on how to do the cornbread steps.

Cornbread or crackers are pretty much all you need as a side for vegetable and hamburger soup.
