Sweet potatoes fall in the lower glycemic food category โ€“ and naturally sweet.

Now if youโ€™re reading this because you love sweet potatoes, itโ€™s possible you are like me and enjoy other sweets as well.

I love desserts. But after surgery to remove cancer and a change in my husbandโ€™s diet, things changed.

We now eat foods advised for a diabetic lifestyle. This requiresย reading food labels and stocking the pantry with low-carb, low-sugar, and lower glycemic foods.

Who reads the labels in your family? You or your spouse/significant other?

Iโ€™m the one in our household who takes a long time at the grocery store. Thatโ€™s because Iโ€™m always reading labels on the back of food products.

Iโ€™m not a health professional or licensed dietician. However, nutrition has interested me for much of my life. It was one of the courses I took to complete my college degree.

Foods on a low-carbohydrate diet

When staying at home became necessary on 2020, shoppers stocked up on groceries and went crazy grabbing the toilet paper and hand sanitizer. I was loading up my grocery cart as well. But not because I went on a hoarding spree to fill up my pantry for fear of running out of food due to the current stay-at-home recommendations and orders. No, I was filling up my basket with foods allowed on a diabetic diet โ€“ like sweet potatoes and other favorite foods like:

  • boiled eggs
  • occasional fried eggs (fried in coconut oil)
  • strawberries
  • blackberries
  • blueberries
  • Atkins bars/drinks

You can see that most of the foods listed above are found in the produce section. Canned foods tend to have too much sodium. Therefore, I feel that itโ€™s healthier to eat fresh produce and organic foods.

Have you ever noticed the difference you feel when eating a russet potato and a sweet potato? The russet potato tends to make me feel bloated whereas the sweet potato doesnโ€™t.

Iโ€™ve cooked sweet potatoes just about every way on the โ€œWays to cook sweet potatoesโ€ list and was pleasantly surprised at how much I liked the sweet potato patties.

When I watched my cousin fry sweet potatoes, she peeled them first, sliced them, then fried them in a little oil while cooking with the lid on. However, the recipe Iโ€™m sharing with you is a bit different. Either way, they taste wonderful.

In this recipe, I chose to microwave the potatoes first before frying.

Fry Sweet Potatoes โ€“ the Recipe:

Microwaved Sweet Potatoes for Two

Quick way to cook sweet potatoes

Ingredients

  • 2 Small Sweet Potatoes
  • 1 tbsp Raw Organic Coconut Oil

Instructions

  1. Wash the sweet potatoes.

  2. Poke holes in the sweet potatoes with a fork.

  3. Place the sweet potatoes on a microwaveable plate.

  4. Cook in the microwave for 3-4 minutes, and check after 3 minutes for doneness - they are ready to fry when you can poke them easily (and don't fall apart) with a fork.

  5. Slice the potatoes into approximately 1/4" patties (or slices), , leaving the skin on.

  6. Heat an cast iron skillet on medium high, and add the coconut oil in the pan.

  7. Fry the sweet potato patties, turning them over after a couple of minutes.

  8. Cook the sweet potato patties for another minute or two.

  9. Serve with your choice of meat and green vegetable.

Sweet potatoes taste wonderful with butter, but the fried patties are great without any butter.
