Healthy Breakfast Skillet

This healthy breakfast skillet is loaded with veggies. It’s a tasty combination flavored with bacon grease from the bacon baked the day before. And this recipe brings back a special Christmas memory to me.

On one of my family’s Christmas holidays, we were visiting my mother-in-law. Often, I would do the cooking when we stayed with her during holidays.

She had a ceramic shop and didn’t have a lot of time to cook. So I helped out during our visits. But this particular time, Mom made her breakfast favorite, potatoes and onions, fried in bacon grease. The taste of that flavorful dish exceeded my expectations. The key to it was the bacon flavor.

The difference between Mom’s original fried potatoes and onions and this recipe is the addition of other veggies – and eggs in the middle.

You could make this a scrambled egg skillet meal, and it would totally satisfy your morning hunger pangs. However, I chose to fry the eggs in a well that I formed in the middle of the potatoes, onions, and other veggies.

Easy Holiday Meal Ideas

This holiday season I’m cooking meals especially made with egg, bacon, vegetable, and chicken. Often, families are ready for easy meal ideas at Christmastime (including the week after). Here are a few on my Christmas season this year:

  • Baked bacon
  • Bacon, Egg, and Cheese Casserole
  • Chicken Pockets
  • Chicken and Vegetable Soup
  • Potato Soup
  • Chicken Spinach Quesadillas

I’m amazed at the multiple options of ways these foods can be cooked. And they all taste so good that it’s a challenge for me to stop eating.

Quick-to-make recipes, hearty soups, and comfort foods are great to satisfy everyone. To make these recipes easier, do-ahead tips can save time. For instance, boil several chicken breasts and store them in the fridge or freezer for upcoming recipes. Bake a large package of bacon, cut the slices into smaller pieces for other dishes you plan to make. Make a large pot of potato soup. Freeze some of it for different types of soups and comfort foods such as these:

  • corn chowder
  • vegetable soup
  • chicken pot pie
  • baked potato soup
  • cheesy potato soup

Serve the fried egg and veggie mix recipe with toast or biscuits. I served it with Bisquick egg and bacon casserole corner leftovers (see photo below). The corners were the breaded part, like a separate biscuit ready for butter and jelly – or lemon curd like I used.

Egg and Veggie Skillet Breakfast

Ingredients

  • 1 Russet potato
  • 1 Sweet onion
  • 1/2 Carton Organic mushrooms
  • 2 Handful Organic spinach leaves
  • 6 Teaspoon Leftover bacon grease
  • 2 Eggs

Instructions

  1. Peel the potato, cut it into round slices, cut those slices across into thin pieces, then cut the pieces twice each into chunks.

  2. Add onion and mushrooms, sliced and cut into chunks.

  3. Pour the veggies into an oiled and hot iron skillet and two teaspoons of bacon grease.

  4. When the veggies are tender (about 5-7 minutes), add the two heaping handfuls if spinach leaves on top.

  5. Stir the spinach in with the other veggies along with two more teaspoons of bacon grease.

  6. Make a well in the middle of the veggies, adding two more teaspoons of bacon grease in the middle of the well.

  7. Then gently pour two eggs side by side and one at a time.

  8. Serve with your choice of biscuits or toast.

What is the easiest way to cook eggs and veggies in a skillet?

Egg and veggie skillets are simple to cook, and you can make it with any vegetables if your choice. Easiest way? Chop them up, put them in a pan with a little oil or leftover grease from bacon and stir until tender. Scramble eggs in, cook a minute or two longer, and your breakfast is done.
