Of course, chicken soup is good any day of the year. But when it’s cold outside, a hearty chicken and vegetable soup is inviting and comforting. See the recipe below:

Ingredients

  • 1 2-12 lb pkg Skinless Boneless Chicken Thighs
  • 1 tsp Santa Fe Seasons Six Seasonings
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 32-oz box Swanson Organic Chicken Broth
  • 3 cup Water
  • 1 12-oz pkg Frozen Mixed Vegetables
  • 1 16-oz pkg Frozen Italian Blend Vegetables
  • 1 cup Baby Dutch Yellow Potatoes (can use more than 1 cup)

Instructions

  1. Season chicken and brown both sides of chicken in a medium-size stockpot.

  2. Add water and broth.

  3. Mix in the vegetables and potatoes.

  4. Cook on high until the potatoes are tender.,

  5. Simmer for 30 to 45 minutes, stirring occasionally.

  6. Serve with crackers.

Introduce a New Vegetable

Be adventurous and add different vegetables in your homemade chicken soups occasionally. If you’re a mom with little children who don’t like too many vegetables, introduce a new vegetable in chicken soup. Make the soup just like you normally do but with a small amount of a different vegetable in addition to the ones they are used to.

Italian green beans, for instance, can be cut into small pieces and added to chicken soup with carrots and peas. Or skip the peas, and use only carrots and Italian green beans.

When you add broccoli or cauliflower in a chicken soup, use the frozen cut broccoli and cauliflower. You can even cut the pieces into smaller ones.

Eat plenty of veggies, keep your kitchen well-stocked with comfort foods – and stay warm this winter.
