Chicken Pockets for Breakfast

Have you ever eaten chicken for breakfast? I’ve had chicken biscuits, but this morning I made chicken pockets with cream cheese – a wonderful easy meal for the holidays.

When I was a newlywed and learning how to cook, I discovered how to make chicken pockets with crescent rolls. For the Christmas holidays, I wanted to make different chicken recipes.

My husband and I are mainly eating chicken right now. So looking through my old cookbook for the recipe, I decided to make the easiest possible chicken pocket recipe – with canned chicken breast.

This morning I made the chicken pockets for breakfast and ate them with an egg and chicken omelet. I browsed online for other “chicken pocket” ideas after the chicken pocket breakfast. There are all kinds of ways to make them.

Ingredients

  • 1 Can Crescent Rolls
  • 1 Can Chicjen Breast (Sam’s Club)
  • 2 Oz Cream Cheese
  • 1/8 Cup Shredded Mexican Cheese (four-cheese)
  • 2 tbsp Butter

Instructions

  1. Open the can of eight crescent rolls, and lay them out on a cookie sheet.

  2. Press them together in sets of two.

  3. Instead of eight triangle crescents, you'll have four rectangular crescents.

  4. Defrost the cream cheese in the microwave for about ten to twelve seconds, or bring them to room temperature prior to opening the crescent rolls.

  5. Mix the cream cheese, shredded cheese, and chicken.

  6. Put one heaping tablespoon of the chicken and cheese mixture onto each rectangles.

  7. Cross each corner over to the opposite sides, and pinch together the seams so that the mixture won't seep out of the pocket.

  8. Put 1/2 tablespoon of butter on top of each crescent roll.

  9. Bake in an oven preheated to 375° for 15 minutes.

  10. Turn the pockets over, and bake another 5 minutes.

  11. Serve with your favorite jelly and an omelette.
