Eggs are quick to make.

How many days per week do you cook? If you’re like most people – on the go, hectic schedules – you don’t cook every day. Neither do I. Though I love to cook and bake, some days I’m too busy and eat leftovers or eat out. But eggs are quick to make. Whether fried, scrambled, baked or in an omelet, they can be combined with different vegetables to make a nutritious and filling meal.

If you’re simply frying or scrambling eggs, you’ll have a meal ready in about ten minutes. Add your favorite vegetable and other necessary ingredients, bake them in a quiche for twenty to twenty-five minutes, and voila, you’ve prepared a full-fledged meal.

Don’t want to take the time for baking a quiche? Do an omelet on the stove. It’s fast. Mix in cheese, veggies, and/or meat. I make omelets often in my iron skillet. Easy to do. Omelets make my taste buds happy.

Grits Inspired

Inspired by my husband, a professional driver, I discovered a brilliant idea. He told me about an eggs-and-grits breakfast he had enjoyed. Grits had been on my mind ever since we had celebrated our 40th anniversary on December 29, 2018. We ate at the fabulous Spindletop in Houston, Texas that provides diners a city-of-Houston view by completing a circle every forty-five minutes. The entree I chose was lamb over a bed of cheese grits with vegetables on the side. Incredibly delicious! If you ever are in Houston, be sure to make reservations to dine at this superb restaurant.

After we came home from our anniversary weekend, I couldn’t wait to come up with a breakfast recipe using grits. We Southern gals like grits. And although I order them when eating out, they seldom wind up on my grocery lists. Why I never thought to prepare dishes with grits is beyond me. If you’re looking for a different alternative to rice or potatoes, try grits.

Ingredients

  • 1/4 cup water
  • dash sea salt
  • 1/4 cup grits
  • 2 large eggs
  • 1 tbsp coconut oil Use Earth Balance Organic Whipped Buttery Spread, and cut 40 calories.
  • 1/4 cup mozzarella cheese (part skim)

Instructions

  1. Boil water until boiling briskly.

  2. Slowly stir in grits and salt, and cover.

  3. Turn burner from high to medium/low or low (I turn my gas burner to low.)

  4. Cook for five minutes, or until grits thicken, stirring occasionally, then remove from heat.

  5. Mix in half the cheese.

  6. Add one tablespoon coconut oil or Earth Balance whipped butter to an iron skillet or pan that you fry eggs in.

  7. Fry the eggs like you prefer them.

  8. Serve the eggs on top of the grits, and top with the rest of the grated cheese.

Now that I’ve made Eggrits Delight (it truly was), it’s going into my recipe collection with my other favorite egg entree creations like French Fried Onion and Spinach Eggs. This French-style omelet is sure to please family and guests alike.
