Simple to make for breakfast (or any other time, I prefer cooking this spinach and egg dish on my electric griddle. Incredibly delicious!
Although this recipe is for one serving, you can increase the ingredients to serve a crowd as well. Just add more of all the ingredients. Double the size for two, quadruple for four, etc.

Honestly, in my opinion, my scrambled egg and omelet dishes turn out the best when I cook them on the electric griddle. Don’t have a griddle? You can just as easily cook this recipe in a cast iron skillet, however. Use any pan you normally cook scrambled eggs in.

I’ve come to the conclusion that my pans and cooking appliances take on their own personalities. Food, no matter what, seems to always stick in a certain small skillet I have.
I can turn the burner on low, pour plenty of oil or cover the bottom of with butter, add water. No matter what I do, it’s going to stick!
But not so on my precious griddle. I baby that appliance. Let me tell you why.
My mom died in 2008, and I think my dad grieved for the rest of his life for her. He lived seven more years after she passed and missed her terribly.
One night before a Christmas holiday, he and my daughter and I went shopping at Walmart. He purchased an electric griddle for a gift and bought me one, too. I took it home and began using it often and love it.
So, yes, you could call that electric griddle part of my comfort food items. And definitely, eggs is one of my comfort foods with or without crispy fried onions.
I think of my dad and that fun Christmas shopping night many times when I’m cooking on the griddle.

French Fried Onion Spinach & Eggs
Spinach and eggs with a yummy crunchy toppings
- 1 tbsp Coconut Oil
- 2 cups Fresh Organic Spinach
- 2 Eggs
- 1/2 cup Grated Cheddar Cheese
- 1 can French Fried Onions
Saute spinach in the coconut oil on a griddle.
Add the eggs and scramble.
Add the cheese.
Top with French Fried Onions.
