Egg Free and Dairy Free Omelet

Egg lovers, imagine 21 days without an omelet or two fried eggs with toast, butter, and jelly. That’s what you face when you decide to go on a 21-day purification program that only allows vegetables, fruit, and whole food supplements with chicken and fish added the second week. Here’s proof that you can go to a restaurant with a group for breakfast and eat an Egg-less (and cheese-less) Vegetable Omelet! I did it!

Order a Veggie Omelet without an Egg at a Restaurant

My blogger group planned to meet for breakfast, and I was tempted to cheat at first. How could I go out for breakfast and not eat eggs and toast or eggs and a pancake? This purification program doesn’t allow eggs or toast for 21 days. Therefore, I prepared my food and drank a veggie and a fruit shake before I went.

When it was my turn to order breakfast, I asked the waitress if it was possible for me to order a veggie omelet without the egg and cheese. She said she would check but had never heard of that before. The Egg-less and Cheese-less omelet drew some attention. “Everybody is talking about how good it looks,” the waitress told me when she brought it to the table.

Okay, I know it’s not really an omelet. An omelet is an egg. Right? Of course. Nevertheless, it’s a satisfying alternative when you’re working hard at not eating eggs or cheese. And it was one of the best veggie meals I had ever eaten at a restaurant.

This was my fifth day of the detox program. Benefits to this particular clean program had convinced me that I should stick to the daily meal plans. For instance, I could have more energy, strengthen my immune system (encouraging since a month of bronchitis), focus better and be more productive.

The hard part for me at first was staying away from bread and not including eggs in my meals. However, refraining from eating those foods was not as difficult as I had thought. I like to eat veggie or chicken and veggie sandwiches on occasion. But my typical weekend breakfast with eggs wasn’t so bad – thanks to the restaurant, Molly Brown’s! Maybe they have discovered a new item to put on their menu.

Whether going out to eat for breakfast or invited to a lunch/dinner party, it is possible to stick to the detox plan. It’s just a matter of planning ahead.

Make the Egg-less Vegetable Omelet

Egg-less Vegetable Omelet is for the person who loves omelets but doesn't want to eat eggs.

Ingredients

  • 2 Lettuce Leaves
  • 1 Tomato sliced
  • 1/2 Sweet Onion diced
  • 1 cup Broccoli divided into small pieces
  • 1 cup Pico de Gallo Purchased at the supermarket, or make your own version.
  • 1/2 cup Corn
  • 1 Avocado

Instructions

  1. Slice a tomato to serve on the side on a bed of lettuce.

  2. Dice half of the onion.

  3. Divide the broccoli into small pieces.

  4. Mix a cup of Pico de Gallo with the onion and broccoli.

  5. Open a can of corn, drain, and add 1/2 cup of it to the Pico de Gallo veggie mix.

  6. Add a sliced avocado on top, and add your favorite salsa.

Like Pico de Gallo? Usually, you can find it at the grocery store. However, it’s just as easy to make your own with as little or as much spice as you choose. Prepare a big batch to keep on hand. It’s a good veggie mix to keep fresh on hand for multiple recipes.
