Vegetarian Burrito Day
Today begins my thirty days of vegetarian recipes. This month will be challenging for me because I like to eat meat. But like my dad told me once, “A person doesn’t need to eat meat every day.” So in April, I’ve decided I will skip meat a few days each week and see how I feel at the end of the month.
Daddy’s favorite vegetable was green beans, and we ate them often. When I got married, I didn’t cook green beans for a long time because I had eaten them nearly every day. Daddy strived to keep healthy in his lifetime by keeping his weight under control and staying active by jogging and walking five to six miles at least three times a week. Daddy lived until he was 90.
Lunch choice after Easter church today with my daughter, son-in-law and three little grandchildren was Freebirds. Ever been there? They actually offer vegan as well as vegetarian options. I chose the vegetarian burrito on a spinach tortilla. Good tasting and very filling.
Freebirds also has a vegetarian bowl on the menu. I’ve ordered it before, and it’s good as well. The only difference between that and the burrito I had today is the tortilla.
The vegetarian burrito I ate today had cilantro rice, refried beans, guacamole, a corn medley, pico de gallo, and cheese.
My parents were not vegetarians, but they did love vegetables and often grew a garden. My favorite vegetable is yellow summer squash. If you’re from the South, maybe you’ve grown up eating Southern-style vegetables like I did. In fact, I chose to bake a squash casserole first when my mom and I decided it was time for me to learn how to cook. Plenty of times as a teen, I would empty a can of green beans or sweet peas in a pot and heat on the stove. That was easy.
Patty Cakes Pantry will also be offering thirty days of recipes in April, but she will focus on vegan entrees. I like eggs, milk, and cheese too much to go a whole month eating vegan recipes. However, I plan to include vegan menus and/or entrees along with the vegetarian ones.
