Vegetarian and love grilled cheese sandwiches?

What can you do if you’re craving a grilled cheese sandwich and you’re a vegetarian -even if you’re a strict vegetarian or vegan? Eat a grilled cheese sandwich. You can, you know. It’s not impossible to give into the craving and not feel guilty about it.

I’m trying the flexitarian type of vegetarian eating lifestyle for a month. When I first considered blogging about a vegan diet along with a food blogger friend, I agreed to take on the challenge. But after serious thought, I changed my mind. I like to eat dairy and am not religiously opposed to eating meat.

Daiya Vegan Cheese

If you are also new at discovering a vegetarian lifestyle and you love cheese, try Daiya. I never knew much about it until my daughter who is vegan told me to try it. I did try it. But time went by, and I went back to my normal cheeses. Now, however, I’m trying out this part-time vegetarian – semi-vegetarian, flexitarian – way of eating and don’t want to live without my cheese. So I’ve been searching for yummy-looking grilled cheese sandwiches.

I really like what peasandcrayons.com came up with for grilled cheese sandwiches. I have not yet made it but assure you that I will as soon as I get the chance. In the meantime, if you haven’t seen this recipe, check it out and make it.

Try out the recipe below for a grilled cheese with kale. I made this one day and got the idea to add kale and dill pickle slices. It was one of those on-the-spur-of-the-moment lunches, not planned, see what’s on hand snacks. And I was at my daughter’s house (not the vegan). First, I knew there was bread and cheese because I had bought some. After making the sandwich, I remembered she had kale. Then I saw the jar of dill pickles. Fabulous sandwich!

Guiltless Semi-Vegetarian Grilled Cheese Sandwich

You can eat a grilled cheese on a vegetarian diet without the guilt.

Servings 1

Ingredients

  • 1 Slice of oat bread
  • 1 Slice Cheese Substitute with Daiya cheese if preferred
  • 4 Slices Dill pickles
  • Kale

Instructions

  1. Grill both sides of bread with a slice of butter in a skillet.

  2. Cut the slice of bread in half, and grill both sides.

  3. Put cheese on top of one half slice, and cover with the other half.

  4. Add kale and pickles, and enjoy,

You can use two slices of bread, of course, but I just wanted a snack so the one piece of bread was fine.

Do you get crazy cravings for grilled cheese with something leafy and a little sour mixed in like I did? You gotta at least make this once.

Nutritious, green, dill, buttery (use dairy or vegan butter), grilled cheese. Ah. Melts-in-your-mouth kind of good.

  1. I am a strict vegetarian and sometimes crave for cheesy, spicy food. This grilled cheese sandwich looks like a great option to feed my hunger.
